This recipe “almost cooks itself” 😉
For many clean eaters Wednesday is the day when a 2nd mini food prep is done — meals are planned out for the rest of the week and we head to the grocery store.
If that’s part of your routine as well, I have a great weeknight recipe to share with you. It’s always a favourite around here and goes together quickly. Here’s the recipe and what you need to get at the grocery store.

1 cup each chopped zucchini, carrots, potatoes and onions
1 cup cooked ham, diced
1 pkg (10 oz) frozen corn
1 can (10 oz) low fat cream of mushroom soup
2 to 2 1/2 cups milk (if you are dairy free like me, you can opt for chicken or veggie broth)
salt and pepper to taste
Put all ingredients in crockpot and stir to combine. Set heat to Low and cook for 6-8 hours. Add more salt and pepper if desired.
