This crock pot recipe is faster than grabbing take out. Yes, I’m serious!
Of course I don’t count the time it takes the crock-pot to do all the cooking. 😉
Think about it. How long does it take you to open and dump a jar of salsa and some chicken breasts into your slow cooker? Definitely less time than it takes you to order and pick up pizza, Chinese or head for the drive through at your local fast food place.
Spend a couple of minutes in the morning to get this recipe started and come home to yummy tex-mex food hot and ready to eat.
1 medium size jar of your fave salsa
2-3 boneless, skinless chicken breasts
1 cup frozen corn
1 cup chopped zucchini
1/2 cup chopped onion
1/2 cup chopped red, green or yellow pepper
1 small jalapeno pepper, seeded (unless you like it super hot!)
Spread the salsa over the bottom of the crock pot. Lay the chicken over the salsa. Sprinkle in any or all of the optional ingredients. Cover and cook on low for 4 hours.
You can stretch this meal by serving it over cooked, brown rice.
