Crock-pot Corn Chowder — What a Crock Challenge

This recipe “almost cooks itself” 😉

For many clean eaters Wednesday is the day when a 2nd mini food prep is done — meals are planned out for the rest of the week and we head to the grocery store.

If that’s part of your routine as well, I have a great weeknight recipe to share with you. It’s always a favourite around here and goes together quickly. Here’s the recipe and what you need to get at the grocery store.

Let me know if you’re trying this recipe or any of the other ones we’ve shared so far. I’d love to hear how you and your family like them.

crock pot corn chowder What a Crock

Corn Chowder.

1 cup each chopped zucchini, carrots, potatoes and onions

1 cup cooked ham, diced

1 pkg (10 oz) frozen corn

1 can (10 oz) low fat cream of mushroom soup

2 to 2 1/2 cups milk (if you are dairy free like me, you can opt for chicken or veggie broth)

salt and pepper to taste

Put all ingredients in crockpot and stir to combine. Set heat to Low and cook for 6-8 hours. Add more salt and pepper if desired.

I like to eat at least 2 vegetarian dishes each week (yup, this gal’s a meat eater!) so this recipe fits the bill! Do you enjoy a meatless meal now and then too? Drop a line b’low and let me know how this recipe went!
