While I’m not usually the first one up, it’s rare that someone makes me breakfast. With the help of the crock-pot and a programmable coffee maker, I can wake up to coffee and oatmeal in the morning. It’s amazing and only takes a few minutes of work the night before.
If you don’t have a programmable coffee maker, just fix the water and ground coffee the night before and turn it on as soon as you get up. By the time you’ve gotten your coffee mug and bowl and maybe grabbed the paper from the front porch, loaded your favourite book or blog on your tablet or grabbed your knitting, coffee will be ready.
Overnight Crock-pot Oatmeal
3/4 cup steel-cut oats
1/4 cup pears
1/2 cup chopped dried apricots
2 Tbsp chopped walnuts
1 cup water
1 cup unsweetened rice, coconut, cashew or almond, plus more for serving
Combine all the ingredients in the slow cooker. Cover and cook on LOW for 8 to 9 hours (or on HIGH for 3 to 4 hours), until thick and creamy.
Stir well and scoop into serving bowls with an oversized spoon. Serve hot, pouring on more milk, if you like.
Makes 2 servings.
